Ugly But Delicious Turkey Sweet Potato Hash?
I dunno what to call it but here’s what I did.
•
3 Sweet Potatoes, Cubed
1 ½ T Coconut Oil
Red Pepper Flakes
Garlic Powder
1pd Ground Turkey
Olive Oil Cooking Spray
1-2T leftover Fajita Mix from meal prep (will post recipe soon)
1 can Black Beans
1 Green Bell Pepper, Diced
½ can Diced Tomatoes
Shredded Reduced Fat Mexican Cheese
•
Preheat oven to 425 degrees. Mix sweet potatoes, coconut oil, red pepper flakes, and garlic powder in a bowl. Pour mixture on a sheet pan and bake in oven for 15 minutes, flip, and place in oven for another 15 minutes. This will cook the sweet potatoes, but if you like a little crunch like me, you’ll want to stir it all again and put back in the oven for another 10ish minutes.
While the potatoes are cooking, you can brown the ground turkey in a saute pan with the olive oil cooking spray. Once cooked, drain excess fat, and add the fajita mix, black beans, bell pepper, and tomatoes. Let all the simmer until the peppers are soft. Once everything is done just stack it all up with the cheese on top. Since I’m only one person this will last me for a couple nights which is awesome. It’s a mini dinner meal prep.

Growing up I was always a lil chunky monkey. Never been a skinny kid and was always the bigger one in my classes. The thing is though, as you grow up it goes from going by chunky to fat. Now, I’ve been blessed to not have been bullied as much as some other stories that I have seen, but don’t get it twisted, it has happened. Although that happened, I am so grateful that it never happened at home. Anytime I went to my mom in regards to a bully I remember her telling me “Honey, tell them you’re not fat, you’re full of love.”

My mom and dad have always had my back. Always tried to prepare healthy food at home and get my sister and I moving. We would go camping, play outside, etc, etc. It got to a point though that I knew people were making comments to them as to why I was so “chunky”. They would kind of steer the conversation in a different way or try to stick up for me. My mom had no problem shutting people down real quick, even family members. We are a team. If I approached them saying I wanted to try Weight Watchers or join a fitness class they have always supported me. It’s because of them I am not ashamed of who I am. Yesterday I knew I would have an early start to my day so I made overnight oats to grab and eat at work. Super easy and pretty yummy. It has quite a bit of carbs, but I needed the energy. Don’t have a picture of how it looked yesterday morning but above is when I put it together.

Here’s whatcha need:
1/2 cup of Rolled Oats
1 tsp Cinnamon
1 packet of Stevia
1 Tbsp of Maple Syrup
1 Apple, diced
1 Tbsp of Chia Seeds
½ cup of Unsweetened Almond Milk

Throw that all in a container or mason jar depending on how cool you are, and shake it all up. The next morning you’ll want to add a bit more milk because it gets super thick.

Hey peeps! I’m VERY inconsistent, but still here!

Not much has changed in the last month and a half since I posted. Work is kicking my but, workouts have been nonexistent, and eating habits have been okay.

I know I need to get it together. This time last year I was so impressed with who I was and who I was becoming. I know that person hasn’t left, she’s just on a bit of a hiatus. I spent most of June sad about it, honestly, and pretty embarrassed. But now, I’m okay. I’m okay knowing that it isn’t over. I know the drive will come back and the motivation will kick in stronger than ever. Right now, I kinda just need to make sure other things in my life are in order before I can go full force again.

In other news, my baby sis and I got matching tattoos this weekend! It’s the word Sister is Morse Code and I am obsessed! It’s my first and probs my last tattoo and I’m okay with it. 😂 I’m not one for pain, though it was super empowering for me. I loved the experience so much I almost cried at the parlor as we were walking out. Lol.

I’ve been thinking a lot about my journey lately and it’s been a rollercoaster ride in regards to how I’ve been feeling.

I’ve been spending too much time thinking about the future and where I want to be at a certain time and I think I need to chill out a bit. I’ve decided to take things on a week at a time versus a month or whatever. My goal now is to make certain goals for the week that are attainable and could make me feel proud on a more regular basis.

My biggest goals this week are to up my water game, because it’s been slacking, and focus on meal balance. Today’s breakfast was two hard boiled eggs, chicken sausage, and half a dragon fruit.

I’m still here, but the struggle is REAL.

My anxiety has been kicking my butt the last few days. In the picture above I was all smiles, living my best life. A couple of hours later I was home, underneath a blanket, crying my little eyes out. Life is pretty okay, but when my anxiety kicks in, every small inconvenience seems to feel like it’s the end of the world.
•
Due to my mental state as of late, my eating habits have not been on point, haven’t worked out in 4 days, and the March Challenge….lol. Today I will be back in the gym, as I know that’ll help with the funk that I have been in. March Challenge is donezo for me. And that’s okay. My knees are not able to keep up and have been hurting the last few days from it. Still going to attempt to work on the burpees and push ups because I just really want my form to get all pretty. I just need to remember I am still a beginner and my body isn’t ready to do as many as the challenge may say.

HEY THERE • I’m still here, but the struggle is REAL. • My anxiety has been kicking my butt the last few days. In the picture above I was all smiles, living my best life. A couple of hours later I was home, underneath a blanket, crying my little eyes out. Life is pretty okay, but when my anxiety kicks in, every small inconvenience seems to feel like it’s the end of the world. • Due to my mental state as of late, my eating habits have not been on point, haven’t worked out in 4 days, and the March Challenge….lol. Today I will be back in the gym, as I know that’ll help with the funk that I have been in. March Challenge is donezo for me. And that’s okay. My knees are not able to keep up and have been hurting the last few days from it. Still going to attempt to work on the burpees and push ups because I just really want my form to get all pretty. I just need to remember I am still a beginner and my body isn’t ready to do as many as the challenge may say. • Alright peeps, thank you for sticking with me, I really appreciate it. SALADS DON’T HAVE TO BE BORING

I used to be that person that would look at someone crazy when they said they were having salad for lunch or dinner. I’d think that’s so boring. You’re doing all this chewing for something that isn’t even that good...lol. But boy, has my mind changed! Now, salads are my go to! So customizable, so filling, and most importantly, so yummy! If you put stuff you love on top of it, you’re bound to like enjoy it. Lol.

Pictured is my salad before being put together the other day. A big bowl of spinach, tomatoes, cucumbers, chick peas (which I bought dry and cooked myself), marinated artichoke hearts, feta cheese, and dill Greek yogurt dressing. Very Mediterranean inspired which I love!

Today is day one of a new challenge. Gonna be honest with y’all...not totally looking forward to it.

This challenge includes burpees which are brand spankin new to me, an I am sure will be blooper central. Haha. But, I’m willing to give it a try. I want to make sure I do not get complacent and I strive to continue to better myself. My form will get better!

If you slide the video you’ll see the month and activities for each day. Every day will consist of burpees, planks, push ups, and squats. I will be paring these with my normal workout routines, not to replace them.

EGG ROLL IN A BOWL

Y’all, why have I waited so long to make this?! So dang yummy. Seriously, this will be on a regular rotation in my house. If you are on Whole30 or Paleo, you’ll just want to sub the siracha for a sugar free chili sauce and the Sarayo with the same mixed with a friendly mayo (my fave clean mayo is by Primal Kitchen)
•
2 tablespoons sesame oil
6 green onions sliced, green and white parts divided
1/2 cup red onion diced
5 cloves garlic minced
1 pound ground chicken
1 teaspoon fresh grated ginger
1T siracha
14 ounce bag coleslaw mix
3 tablespoons coconut aminos (or soy sauce)
1 tablespoon rice wine vinegar
Salt and Pep to taste
Sesame seeds for garnish
Sarayo
•
Heat sesame oil in a large skillet at medium heat. Add white parts of green onions, red onion, and garlic and saute, stirring until red onions are soft and translucent.
Add ground chicken, grated ginger, and 1 tablespoon sriracha and cook until chicken is browned and cooked through. Add coleslaw mix, coconut aminos, rice wine vinegar, salt and pep, and stir until well combined. Cook until cabbage is tender. SO EASY. Top with Sarayo (I bought this at Walmart but you can make your own by mixing Siracha and mayo together) sesame seeds, and your leftover green onions.

Guys, it’s been a while since I’ve meal prepped like this and boy did I miss it!
•
Last night I made this Low Carb Greek Chicken Meal Prep that I found on Pinterest. Super easy! Literally put everything on a sheet pan and let it do it’s thing in the oven.
•
Here’s what you need:
•
1 lb Chicken breast
1 1/2 tsp Sea salt (plus more for brine)
3 tbsp Olive oil
1/2 tsp Black pepper
2.5 C Zucchini (1/4 inch thick, about 4 small zucchinis)
1 C Grape tomatoes (halved)
1/2 large Onion (cut into medium half moons)
1/2 tbsp Dried dill
1/2 tbsp Dried parsley
1 tsp Dried oregano
1 tsp Garlic powder
1/4 cup Feta cheese (crumbled, optional)
•
Preheat the oven to 400 degrees F. Line sheet pan with foil and grease well.
Fill a large bowl with water. Add 2 T sea salt and stir to dissolve. Add the chicken and set aside to brine for 10 to 20 minutes.Cut the veggies. In a small bowl, stir together the dried dill, parsley, oregano, and garlic powder. When the chicken is done brining, pat dry and place in one area of the baking sheet. Brush the chicken w/ 1 T olive oil on both sides. Use 3/4 tsp sea salt and 1/4 tsp black pepper to season both sides of the chicken. Sprinkle both sides with the herb mixture, using up half of it. In a large bowl, toss the chopped vegetables and remaining 2 T olive oil. Add remaining 3/4 tsp sea salt, 1/4 tsp black pepper, and the rest of the herb mixture. Arrange the veggies in a single layer on the baking sheet, making sure they are not over the chicken. Roast the chicken and veggies in the oven for about 20 minutes, until veggies are soft and chicken is cooked through. Remove from the oven and let the pan rest for 5 minutes. Sprinkle with feta cheese when ready to eat!

Y’all, this picture on the left has me cracking up. I am mad at all my friends who told me I was cute when I was not. LOL.

This change is important to me because it’s not all weightloss related. You can tell that my self care has changed between the two pictures as well. I look at little more put together and my smile seems a bit more genuine.
•
I can’t say that in the first picture I was sad or depressed. I don’t remember thinking woah I’m ugly or woah I’m too big, which BTW I still don’t think that. But I do know that I just didn’t care, which I guess is a sign of depression? I’m still figuring that out. I’m just grateful that I’ve gotten to a point in my life that I do care more for myself. I still have so much to work on internally and physically but that’s okay. This journey was never intended to be a short quick fix. I’m in this for the long haul.

VACAY RECAP • NSV ADDITION

So grateful to have spent the last few days in Clearwater, FL with my amazing family. It was definitely needed.
•
Nutrition was not on point BUT it could have been worse. The family and I stuck with two meals a day and was still pretty mindful for the most part. We did treat ourselves to yummy ice cream almost every evening and guess what?! I HAVE NO REGRETS!
•
With the lack in the diet, I was still able to experience some awesome NSV’s;
•
I was able to fly both ways with no seatbelt extender! YAS.
•
I found myself being more active than I’ve ever been! We walked everywhere and I averaged about 12k steps per day. My sister and I also rented a bike to peddle along the beach. My sister was actually complaining to me about my going too fast! This would never happen with old me. Your girl would be TIRED. Lol.
•
I feel so happy and just all around blessed to have spent time to relax and notice the little changes in body.

PALEO SALISBURY STEAK

Hey guys! This week I gave this super easy Salisbury Steak recipe a try and it was AWESOME. The recipe is Paleo and Whole30 friendly. I ate it with Green Giant Frozen Mashed Cauliflower. That is not Paleo because it does have parmesan cheese in it, but the macros were good and it actually tasted pretty yummy!

I found this recipe on pinterest and changed a couple things. I’ll leave little notes on things I may have changed.
•
4 burger patties (I used brisket burgers)
½ white onion sliced
2 tablespoons ghee
4 cloves garlic minced
1 14.5- ounce can beef broth (LOOK AT THE INGREDIENTS took me forever to find a clean option)
12 ounces baby bella mushrooms sliced
2 teaspoons anchovy paste
2 tablespoons tapioca starch (I used arrowroot powder)
1 cup full-fat coconut milk
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon freshly ground black pepper
½ teaspoon salt plus more to taste

Heat ghee in a large skillet over medium heat. Add burgers and cook until cooked through. Transfer to a plate.Add onions and sauté until translucent. Add mushrooms and sauté until they start to soften. Add garlic. Cook, stirring constantly, until fragrant.Add anchovy paste and tapioca flour. Whisk until smooth. Slowly add beef broth, whisking constantly, and bring to a boil.Reduce heat to a simmer.Whisk in coconut milk, garlic powder, onion powder, black pepper, and salt; stir well. Return patties to gravy and simmer a couple minutes, then serve over mashed potatoes or cauliflower.

Today was my departments holiday party at a gastropub.
•
Every ounce of me wanted to eat fish and chips, but knowing there are more parties and my mommas Christmas dinner coming up, I ordered a salad.
•
It was a Grilled Steak Salad and pretty delicious! It had steak, Gorgonzola, pears, and nuts along with yummy veggies and mixed greenery.
•
Only regret was that I didn’t leave very full, so by dinner time your girl was HUNGRY. Lol.
•
I’m proud of the decision I made. 😊 I get like I still got something I wanted by having steak but also made a cautious decision by not having it with fries lol.

Hey peeps, I’m sorry for being so quiet on here! The holiday season has been keeping me on my toes. Every weekend until Christmas is jam packed with holiday parties, Christmas church services, friends in town, work parties, and so much more.

Honestly, my diet has not been on target nor has my exercise. Still being mindful with meal prepping and getting a couple workouts here and there, but not as strict as I should be. But, if I’m being real, I’m okay with it. I’m not interested in adding stress during this time of year and freaking out about it. My journey is a long term thing. I’m not interested in hitting some huge goal by the new year, I’m interested in becoming a better me long term.

TRY SOMETHING NEW

This weeks meal prep was super simple but I did get to try something new: Delicata Squash! So many of y’all talk about this stuff and now I get it.IT’S SO GOOD.
•
All I did was toss in olive oil with some salt free garlic pepper seasoning, spread out evenly on a baking sheet, and baked at 375 degrees for about 25-30 min, flipping halfway through. It’s so so good.
•
I plan on trying it again later this week seasoned with cinnamon and maybe a little bit of brown sugar?? Hmmm. I’ll keep you posted.
•
My meal prep also consits of chicken tenderloin seasoned with salt free grilling seasoning, and @traderjoes riced cauliflower stuffing. Very fall inspired food but super delicious.

Honestly guys, I do not weigh myself. I have no interest in stepping on a scale any time soon. Having PCOS, my weight fluctuates a lot which has lead to lots of disheartening moments. I would think I lost so much weight and weigh myself and it wouldn’t be much. I know how disappointed I would get and unmotivated I’d become because my brain would just go to thinking, “What’s the point?”
•
Because of that, I truly do not want to weigh myself. If I do, it’ll be at a doctors appointment or at my parents house because I don’t even own a scale. I get more excited over my #NonScaleVictories (#NSV). I’m not saying I’ll never weigh myself or act like I’m not interested in it. Right now, it’s just not my main focus.
•
With that being said, guys, if I don’t post my weight on here, I don’t think it’s fair to ask me how much I’ve lost. If I wanted to share, I would. Please be mindful of that because it’s exhausting explaining myself lol.

BEEF AND BROCCOLI (PALEO FRIENDLY)

Hey, guys! Here is what I made for my meal prep this week. Found the original recipe on Pinterest but made a couple tweaks to it. Below is what I did. Super yummy, super easy! Also pretty cheap! I spent 10 bucks at Kroger for the meat, broccoli, ginger, and a couple other things. Plus had a lot of stuff in my pantry like the coconut aminos, arrowroot, and ghee.
•
Ingredients
1 lb beef (sirloin, skirt steak, boneless short ribs...etc.)
2 heads broccoli, break into florets
2 cloves garlic, minced
2 pieces thin sliced ginger, finely chopped
Ghee or cooking fat of your choice
Beef marinade:
2 tbsp coconut aminos
1/2 tsp coarse sea salt
1 tbsp sesame oil
1/4 tsp black pepper
1 tsp arrowroot powder
Sauce combo:
2 tbsp coconut aminos
2 tsp sesame oil
1/4 tsp black pepper

Here’s what you gotta do:
I bought my meat pre sliced from Kroger. I think it was labeled as stir fry steak, but if you have a whole slab of meat (lol) slice beef into about ¼ inch thin. Marinate beef with ingredients under “beef marinade”. Mix, cover, and fridge for at least an hour. Place broccoli florets in a microwave safe container. Add 2 tbsp water. Loosely covered with a wet paper towel and microwave for 2 mins. If you’re against microwaves you can just quickly blanch the broccoli. Set aside.
Heat pan with 1 ½ tbsp ghee. Add garlic and ginger. Cook till translucent. Turn up the hea, add marinated beef. Spread beef evenly over and cook until the edge of the beef is slightly charred. Do the same thing for flip slide. Add “Sauce Combo”. Stir-fry about 1 min. Add broccoli. Stir-fry for a bit more, and BAM, you’re done! I paired mine with brown rice. Delicious!

NEW DAY, NEW ATTITUDE

Y’all, yesterday (picture on the left) I was going through it. I wanted to try this 5k training program that I found online. The first week was supposed to be interval training of running 1 minute and walking 90 seconds, 8 times.
•
That was an epic fail.
•
I only did two of those intervals and wanted to just quite. I was so frustrated with my body. I went in thinking oh I got this, and was saddened when I realized I couldn’t. Not only did I not complete that challenge, I had my lowest speed to date because after jogging I had to slow down lots. While I was in the shower I just kept telling myself well, I guess I can’t run. Maybe I should quit? My mind went to a weird place and it was not fun to process.
•
So, here we are today (picture on the right). I woke up this morning thinking I would not work out, but I my gym clothes “just in case”. I’m glad I did. I somehow got two miles in and ended with a smile on my face.

Here’s to not giving up and spiraling too much! Today is a new day. New chance to keep aiming for these goals.

Today, my family and I went to the zoo. Though we walked slowly to see the animals, we got those miles in! 3.7 miles to tack onto my miles challenge.

Getting in your steps doesn’t have to mean walking on a treadmill or going to the track! Make it fun, go outside, and GET CHO MILES!

This was me yesterday while on a morning walk all by myself. Not the best picture, but the best moment.
•
The weather was in the mid fifties yesterday morning which was perfect for a hoodie. The sun was out and it was pretty quiet. I got to see an older couple riding around in a two seater bike, another couple running, and a couple solo walkers along the way. During my walk I had random moments in which I caught myself smiling. I needed this.
•
I was able to encourage myself to jog 3 times along my walk. They weren’t for long distances, but enough to make me want to keep trying.
•
Guys, I really want to be more active. I feel like there is a runner in me wanting to break through. I know it won’t happen overnight, but I’m ready to try.
•
Now, to find some sneakers to make my feet hate me a little less. Lol.

HELLO NOVEMBER

I’m so excited that I successfully finished my October challenge! I missed one day, but compare to the old me, that is a HUGE success. October was an interesting month for me. I was trying to get back on track after falling for what felt like most of the summer...lol, and I was preparing for my move. I was a hot mess in the beginning. I was stressed and had some pretty huge zits to prove it. Now that the move is complete and things have settled down a bit, I have started to cook more again and get more motivation. I’m pumped to end this year strong and keep pushin through.
•
November’s challenge is 50 miles in 30 days. This averages at about 1.67 miles per day. If you slide through you will see the template I’ll be using to keep track. I have printed it out and will be coloring in each mile I complete. I’ll be doing my miles on the treadmill, but if you’d like to join it can be any way you’d like.
•
My sister and I decided that 2019 will be the year of 5ks. I’ll explain what I mean by that closer to the end of the year, but I think this would be a good way to start preparing.

MID WEEK MEAL PREP

Hey peeps! Here’s my lunch for the next couple days to get me through the rest of the week.
•
Chicken breast tenderloins and roasted potato, brussel sprouts, and asparagus.
•
The veggies were baked in at 375 degree oven for about 30 minutes, moved around half way through. And seasoned with garlic, oregano, salt and pepper. Coated with avocado oil.
•
The chicken was seasoned the same as veggies but cooked in a sauté pan. I usually bake it all together but the veggies and chicken could not seem to fit on the same sheet pan. 🤷🏽‍♀️😅
•
Super simple, super yummy.
•
Also, I literally used one potato for 3 days, so it’s still low carb.

LOW CARB COCONUT FLOUR PANCAKES

If you don’t like coconut, you won’t like this, FYI. The taste of coconut is not hidden at all!

This is pretty eggy but not like pancake shaped omelets. You can tell when you cook them the cook more eggy then doughy. I don’t know if that makes sense but y’all, these were a success to me. Easy to make, and gave me the little indulgence I was craving this Sunday morning.

Here’s what you need:
4 eggs
1/4 c. Milk (I used unsweetened almond milk)
3 T. Melted Coconut Oil
1/2 t. Vanilla
1/4 c. Coconut flour
1/4 t. Baking powder
1 Stevia packet
Sprinkle of cinnamon
Pinch of Sea salt

In one bowl mix all the wet ingredients. In another mix all the dry ingredients. Slowly pour and stir in wet to the dry. Cook as you would regular pancakes on a griddle pan, grease however you’d like. I used butter because 🤷🏽‍♀️ lol. ENJOY! I topped mine with sliced banana and sugar free syrup!

During these last few weeks, it’s been hard to stay on track. My eating habits have not been great, nor have been working out on a regular basis.

I mentioned in my story a couple days ago that I’m still happy because at my doctors appointment I learned that I still lost quite a few pounds. It’s good to know I have not totally failed and it encourages me to keep going.
•
As I settle into my new place and create a more consistent schedule in regards to working out and meal prep, I will post more content. Bare with me guys! I’m a girl who is motivated and ready to shed some more weight!

While I figure things out and get my goals on check I feel like it’s important for you to know that I am happy and feeling confident. Why? Because things are good. Even through the stress and not so fun moments things still managed to work out. I still lost some weight, I just moved to a new place, things are GOOD. Rather than getting upset of your falls, remeber you can always get back up and keep it pushin’. Weight loss doesn’t happen overnight, nor does weight gain. It’s all good.

LOW CARBISH GLUTEN FREE BLUEBERRY SCONES

Let me start by saying that these don’t taste like real scone because they’re not...lol. But they are pretty delicious, specially if you’re craving something super carb-y for breakfast.

I say low carbish because it is sweetened with honey in the original recipe but you can sweeten it with something else. I used half honey, half stevia. But I’m sure you can use all stevia, erythritol, or whatever you’d like. I found this recipe on Pinterest by searching “almond flour scones”
•
Here’s what you need:
2.5 cups of Almond Flour
1/2 tsp sea salt
2 eggs
4 tablespoons honey or other natural sweetener (I used 2T honey + 3 stevia packets) or 4 dates, pureed
1/3 cup melted butter, ghee or coconut oil (I used ghee)
1/2 cup blueberries (or any berry you want)

Preheat oven to 350. Grease a baking sheet.In a medium bowl, mix together dry ingredients.In a separate bowl, whisk eggs until combined.Add melted butter, and honey.Combine wet and dry ingredients.Fold in berries. Make a thick rectangle on baking sheet and cut into square or just make drops to be biscuit shapes. Bake 15 -20 minutes. That’s it y’all! Enjoy with a big cup of coffee!

EVENING WALK

Today I took a 40 minute walk instead of the gym along with my 31 day full body challenge when I got home.
•
I forget how much working out or being active doesn’t suck. The last couple of weeks I didn’t not want to workout and found every excuse in the book. But once I do workout I feel super accomplished and less anxious.
•
Slowly learning to be more intentional when it comes to working out and getting that heart rate up. Grateful everyday for the little steps I take in the right direction.

Hey guys! I didn’t meal prep this week because I’ve been feeling a bit under the weather. I did, however, go grocery shopping and bought a lot of things I can just put together.

Hey peeps! This is my meal prep for a couple days. I’m trying to only do two or three days at a time because I’m starting to realize that I waste more than what I should. Making food for the entire week doesn’t help account for leftovers I may have from dinner the night before, work lunches, and things like that. I really want to waste less and make better choices. Knowing my luck though, this will probably one of those weeks that I would have used my meal perro all week. Lol. We’ll see though.

Here’s what we got:

Baked sweet potatoes that were cooked in a 400 degree oven with olive oil and salt free seasoning. I slice them in half, toss them in oil and seasoning, and put them on a baking sheet, flesh side down, skin side up. This was only take about half hour in the oven.
•
Sautéed chicken breast with bell pepper seasoned with salt free seasoning as well.
•
Frozen broccoli.
•
That’s it! Simple yet effective!

Hi Peeps! Posting my lunch meal prep for the week kinda late because I did it Monday instead of my usual Sunday’s. I had jury duty yesterday which gave me extra time to do it in the morning. This worked out perfectly because I was able to marinate my chicken over night.
•
I made Greek style chicken with roasted veggies (Zucchini, Red Bell Peppers, and Red Onions)
•
Here’s the marinade for the chicken:
2 pounds boneless, skinless chicken breasts ( I used tenderloins and cubed them)
1/4 cup olive oil (I used an avocado/coconut oil blend)
3 Tbs garlic, minced
1/3 C lemon juice
1 Tbs red wine vinegar (I used apple cider vinegar)
1 Tbs dried oregano
1/3 C plain Greek yogurt
Kosher salt and freshly ground black pepper, to taste

Threw that all in a bowl with a lid and let it get all yummy over night. Cooked it on the stove pot while the veggies were roasting in the oven and BAM. Meal prep done!

Today, my friends @_valenatalia, @antsfonseca, sister @kelseyguerrero, and I decided to drive down to #Austin for the weekend. On our way down we planned to stop in #Georgetown to go caving!

Before joining this journey I would have recommended something less active and easy. I would have wanted to be in an air conditioned place and wanted to keep still and relax because I was on a mini vacation.

LESS SITTING, MORE DOING • Today, my friends @_valenatalia , @antsfonseca , sister @kelseyguerrero , and I decided to drive down to #Austin for the weekend. On our way down we planned to stop in #Georgetown to go caving! • Before joining this journey I would have recommended something less active and easy. So, here’s what I brought; an apple and @barneybutter chocolate almond butter. It was the option with the least amount of carbs and seemed the most “real”. Today I got to spend some time with my new friend Karla to make REAL salsa and black beans. We also tried a couple low carb tortillas recipes. The winner of this evening were these bomb zucchini tortilla. I’m so grateful for this evening with @karladechavez . Got to get to know each other and make yummy food! To more healthy food trials!

Here’s what you need:
•
1 cup grated zucchini packed, squeezed to remove zucchini juice
1 egg
1/3 cup arrowroot flour packed
2 tablespoon Coconut flour
1 teaspoon oregano
1/2 teaspoon sea salt
1/4 teaspoon ground pepper
•
Preheat the oven to 355F. Prepare a baking tray covered with baking paper. Set aside.
Wash the zucchini and leave the skin on.
Using a grater, finely grate the zucchini. Squeeze the extra zucchini juice with your hands over the sink. Press the grated zuchini into a measuring cup until it reach 1 cup. Add eggs and combine with the dry ingredients: arrowroot flour, coconut flour, oregano, salt and pepper. Using a mechanical ice cream scoop maker (we actually used the tablespoon measuring spoon, two scoops per tortilla) Scoop some zucchini tortilla batter and scoop out onto the baking paper. Using your finger press the batter until thin and shape a round tortilla. The recipe says it’s makes 6 but I made 4 and a mini lol. Bake for 20-30 minutes (a mine took 35 min) or until the tortilla gets brown on the side and hold together.

I’ve been a lot quieter than usual on here and it’s because I am honestly struggling at figuring out how to balance.

We’ve been short handed at work which has led to overtime. I’ve also been looking for a new apartment since my lease is up in October. And just other adulting type of stuff.
•
I’m the kind of person that if I’m busy during the day or have a busy weekend I need to shut down when I get home, which has resulted in me neglecting workouts and having quick dinners which aren’t the healthiest. Excuses, excuses, I KNOW.

With all that, my motivation is still there. I know what I have to do. Now it’s the time to actually do it. Lol.

Anyways, here’s a pretty bomb selfie from church this last weekend. My healthy habits have not been 100 percent but that confidence is still there honey.
