Köfte Christmas Puddings (Recipe Below ⬇️): Following on from yesterday’s Christmas Baklava post (which I will share the recipe for very soon), I have another festive recipe idea for you all, based on my popular Patates Köfte recipe. The idea came to me on Sunday night and the dollop of garlic yoghurt, herbs and pomegranate seeds just completed the Christmas Pudding idea I had in my head perfectly, even though it’s a savoury canapé. Here’s how to make them:
500g lean beef mince, 400g grated potato, 1 large onion and 1 large handful of parsley finely chopped, 1 tsp salt, 1 tsp black pepper, 1/2 tsp cumin, 1/2 tsp cinnamon, 1 egg, mix it all up really well, roll into balls just smaller than ping pongs (you’ll get around 40 köfte from the mixture) and bake in a preheated oven at 200C on greased baking trays for 25-30 mins until golden brown. I also shallow fry them the traditional way (the sunflower oil in the pan comes up just to the top of the Köfte) for 8-10 mins, slowly turning over halfway through. Wait for Köfte to cool down a little then serve each one with a small dollop of garlic yoghurt (4 tbsp Greek yoghurt, 2 finely grated garlic cloves, pinch of salt), a sprinkling of pul biber, summak, dried mint, finely chopped parsley and a couple of pomegranate seeds on top. Köfte Christmas Puddings!
You could also make the Köfte with the same amount of sweet potatoes instead of white potato (my recipe for which I have posted many times before) but these can only be baked for the same amount of time as above, otherwise they fall apart. Can also be frozen once cooled (for up to a month), then defrosted in the fridge over night and reheated in the oven at 180C for 15-20 mins or until piping hot.
